Four iconic pasta dishes you must eat when in Trastevere Rome

So you've got your place in an AIR BNB or Booking.com and now you're heading out into the small. back streets in search of one of the many trattorias and restaurants in this local area of Rome.

No visit to one of the most vibrant areas of Rome - so typical for Romans - would be complete without sampling one of these four fabulous dishes.


Gricia


A very simple dish, it consists of Pasta, black pepper and guanciale (pork cheek). One of the best pasta dishes you can have at Ristorante da Massi together with many other amazing typical roman dishes. They cook this in the authentic way.


Cacio e Pepe


Not easy to replicate... it's hard to recreate that genuine creamy pecorino cheese sauce. There is one trick I can share with you! Use the water that you cook the pasta with to melt the pecorino cheese before adding it to the pasta. (There is no cream or butter added ... even though it's creamy).


Carbonara


And no there is absolutely no cream or peas in this traditional Roman dish. Invented around the time of the second world war, in the middle of the 20th century this dish has become a staple of the local people of Rome. This is (in a basic description) egg and bacon pasta - but of course it's never that simple in Italy. The Eggs are not cooked just warmed by the pasta. And the bacon is not bacon... it's again the super tasty pig cheek - Guanciale. The defining taste and texture comes from adding the pecorino cheese (local sheep cheese) and a good dose of black pepper.


Amatriciana


Originally from a small town called Amatrice in Lazio this dish is a symphony of flavour ! It's made with guanciale (The Roman's seem to like this !), pepper, red sauce and is usually a little of bit spicy.

Don't attempt to recreate this amazing dish without Italian training 😁 just recreating the red sauce is an art form all by itself. I highly recommend Osteria Nannarella to try this amazing dish.
